Aunt Dottie's Quick and Easy Asian Noodles

Ingredients

  • Almond Ginger Sauce:
  • ⅓ cup Aunt Dottie's Ginger Almond Dressing
  • 1 tablespoon reduced sodium soy sauce (gluten-free soy sauce can be used)
  • ½ tablespoon fish sauce
  • 1 tablespoon fresh garlic, minced
  • 1-2 tablespoons fresh ginger, minced

  • For more of a Thai flavor, try the sauce variation below:
  • ⅓ cup Aunt Dottie's Ginger Almond Dressing
  • 2 tablespoons reduced sodium soy sauce
  • 1 teaspoon minced garlic
  • 3 tbsp coconut milk
  • Juice of 1 small lime
  • Small sprig of cilantro, chopped

  • 1 pound of your choice of pasta
  • Soba, buckwheat or rice noodles (spaghetti or linguine noodles may be substituted)
  • Kosher salt for pasta water
  • 1 carrot, thinly sliced or julienned
  • 1 small zucchini, thinly sliced or julienned
  • 1 bell pepper, thinly sliced or julienned
  • 1 cup fresh broccoli florets

Instructions

  1. Combine all sauce ingredients in a small bowl and set aside.
  2. Cook noodles in salted water according to package directions.
  3. When the pasta has 1-2 remaining minutes of cooking time, add all veggies into the boiling pasta water. If more tender veggies preferred, add carrots and broccoli with 3-4 minutes remaining.
  4. Drain well and toss pasta with crisp-tender veggies in the Aunt Dottie's Ginger Sauce.
  5. Top with cooked chicken or other protein if desired.
